Awesome Crock Pot Enchilada Recipe

1-1/2 lb. ground beef
1 medium onion, chopped
1-2 cloves of garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
6 corn tortillas
2 cups fresh or frozen corn (or 15-oz can)
1 19-oz can enchilada sauce
2 cups (8 oz) shredded cheddar cheese
1 2-1/2 oz. can sliced ripe olives, drained
1 cup sour cream

Brown ground beef and drain. Add onion and garlic; cook over medium heat until tender and transparent. Add salt and pepper. Place 2 tortillas in bottom of crockpot. Place a third of the following in layers over the
tortillas: meat, corn, sauce, cheese and olives. Repeat tortillas and other layers two times. Cover and cook on low 6-8 hours. Serve with sour cream.

Easy Slow Cooker Chicken and Mushroom Pasta Dinner

1 (10 3/4 oz.) can cream of chicken soup
1/4 cup sour cream
 16 ounces skinned, boned uncooked chicken breast, cut into bite size pieces
1 4-oz. can sliced mushrooms, drained
1/2 cup finely chopped onion
1 1/3 cups uncooked elbow macaroni

Spray inside of slow cooker with nonstick cooking spray.  Add chicken soup and sour cream to  and mix well. Stir in chicken, mushrooms and onion. Add macaroni and mix everything together. Cover; cook on low 8 hours or high 4 hours. Stir before serving.


Healthy Low Fat BBQ Slow Cooker Pulled Chicken

1 8-ounce can reduced-sodium tomato sauce
1 4-ounce can chopped green chiles, drained
3 tablespoons cider vinegar
2 tablespoons honey
1 tablespoon sweet or smoked paprika
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons dry mustard
1 teaspoon ground chipotle chile
1/2 teaspoon salt
2 1/2 pounds boneless, skinless chicken thighs, trimmed of fat
1 small onion, finely chopped
1 clove garlic, minced

Stir tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt in a crock pot until well blended. Add chicken, onion and garlic; stir to mix. Cook in slow cooker on low until the chicken pulls apart easily for about 5 hours. When done cooking, shred with a fork. Return the chicken to the sauce, stir well and serve on buns.

COCA-COLA CHICKEN SLOW COOKER RECIPE

htt4 pounds chicken, cut up
1 small bottle catsup
1 medium onion, chopped
1/4 teaspoon celery seed
1 bay leaf
Salt and pepper, to taste
1 (10 ounce) can Coca-Cola (not diet)

Place cut up chicken in bottom of crockpot. Add the catsup, onion, celery seed, bay leaf, salt and pepper. Pour in the Coca-Cola; stir once. Turn pot to LOW; cook overnight or for 8 hours. Remove chicken from bones and also remove bay leaf. Serve the chicken over cooked rice.

LAZY GARLIC WINGS

2 to 3 pounds chicken wings
1/4 cup butter
1/4 cup minced garlic
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon basil
1 teaspoon black pepper
1 teaspoon Tabasco sauce

Place chicken in crock pot, then add remaining ingredients. Cook on
LOW for 6 to 8 hours. Remove from crock pot with a slotted spoon and
serve with hot Italian or French bread.

LOW FAT ORANGE GLAZED CHICKEN

6 ounces orange juice, frozen concentrate-thawed
3 chicken breasts, split
1/2 tsp marjoram
1 dash ground nutmeg
1 dash garlic powder (optional)
1/4 cup water
2 Tbl cornstarch

Combine thawed orange juice concentrate (not regular orange juice) in
bowl along with the marjoram, garlic powder and nutmeg. Split the
chicken breasts to make 6 serving sizes. Dip pieces into the orange juice
to coat completely. Place in slow cooker/Crock Pot. Pour the remaining
orange juice mixture over the chicken. Cover and cook on low for 7-9
hours, or cook on high for 4 hours if you wish. Precise cooking time is
not important in slow cooker/Crock Pot cooking.

When chicken is done, remove to serving platter. Pour the sauce that
remains into a saucepan. Mix the cornstarch and water and stir into the
juice in pan. Cook over medium heat, stirring constantly, until thick
and bubbly. Serve the sauce over the chicken.

(ARA) - Cheryl Koompin knows a thing or two about getting dinner on the table for her family after a long day of work. She and her husband raised two boys while maintaining the family's potato farm in American Falls, Idaho. That meant years of early mornings, long days in the field and making sure dinner, homework and chores were taken care of in the evening.

Today, Koompin is the United States Potato Board's (USPB) chairman of the board. She is using this expertise and leading the U.S. potato industry in their efforts to educate consumers, specifically moms, that potatoes are a nutritious, delicious and quick mealtime solution.

"I understand first-hand the challenges of getting a healthy meal on the table in minutes," says Koompin. "I hope some of the potato tricks and tips I learned over the years can help other moms speed up dinnertime prep. Plus, kids love potatoes and moms can feel good about serving them."

One medium (5.3 ounce) potato has 110 calories, no fat, sodium or cholesterol, and more potassium than a banana. Pound for pound, potatoes are also still one of the least expensive items in the produce department. One serving - a medium potato - will set you back only about 25 cents.

Camper's Stew Slow Cooker Recipe

1 pound hamburger, browned and drained
2 (16 ounce) cans creamed corn
2 (16 ounce) cans tomatoes
2 (4 ounce) cans boneless chicken
10 ounces catsup
3 tablespoons Worcestershire sauce
1 tablespoon lemon juice
Dash of Tabasco sauce

Mix well and pour into crockpot. Cook 3 hours on HIGH or 6 hours on
LOW, stirring occasionally. Makes 3 quarts.

Boneless Chicken Thigh Recipes

Chicken thighs are often overlooked in recipes because of the popularity of boneless chicken breasts, which are more in demand. However, chicken thighs are juicier and much more flavorful. They are also very economical and if you are on a tight budget, there are lots of chicken thigh recipes you can make, whether you are looking for something international like easy chicken enchiladas or something for the summer like grilled chicken recipes.

You can use boneless chicken thighs in casseroles and stews and pretty much any dish where you would normally use chicken breast. You might like to use some chicken breast and some chicken thigh, for a contrast in flavors and textures.

Crockpot Country Chicken Stew with Basil Dumplings

12 small white onions
water
1 pound boneless skinless chicken thighs
1 pound bonless skinless chicken breasts halves
1/2 Tablespoon chopped fresh basil leaves
(or 1/2 teaspoon dried, crumbled)
salt and pepper to taste
1 large red bell pepper cut into 1" squares
4 cloves garlic - thinly sliced
2 cups canned chicken broth
1/3 cup dry white wine
2 tablesppons all purpose flour
2 tablespoon butter - room temperature
1 pound fres asparagus - cut into 1-1/2" lengths

Dumplings:
1 cup buttermilk and baking mix
1/3 cup whole milk
1/4 cup chopped fresh basil leaves (or 1 Tablespoon dried, crumbled)

Using a sharp knife, make a small X in the root end of each onion. Bring a saucepan of water to boil. Add the onions, lower the heat, and simmer for 5 minutes. Drain and rinse under running cold water. Slip skins off onions.

Rinse chicken and pat dry. Quarter the thighs and chicken breast halves. Stir in basil and seaons with salt and pepper.

Put chicken pieces in a 3-1/2 quart or larger crockery slow-cooker. Top with onions, bell peppers, and garlic. Pour in stock, and wine. DO NOT sitr. Cover and cook on LOW for 6 - 8 hours or HIGH for 2 - 2-1/2 hours.

Stir the stew. If cooking on LOW, change setting to HIGH. In a small bowl, blend together the flour and butter. Stir into slow-cooker. cook, stirring until sauce begins to thicken, about 5 minutes. Stir in asparagus.

In medium bowl, combine dumpling ingredients until evenly moistened. Drop by Tablespoons onto hot stew in 6 small rounds. Cover and cook for another 25 to 30 minutes, until dumplings are cooked through.

Serve immediately.

Three Easy Slow Cooker Chicken Recipes

As warm weather approaches, I am eagerly anticipating time outside working in the yard and garden, playing with the kids and cooking meals on the grill. Not all meals have to be grilled during the warm months however. Just like any other time of the year, we're busy people who do not have time to wait for food to cook. So, just like any other time of the year, I use my slow cooker to make dinner-time easier.

My youngest son has lately acquired a picky attitude regarding food, and chicken has become a food of choice. With that in mind, I've found some chicken recipes that pass both of our requirements: easy to prep, simple and few ingredients and cooked in a crock pot. There you go, perfect for busy folks who aren't in the least bit interested in messing around in a kitchen for very long.

Here are three easy chicken recipes for your slow cooker. Enjoy your meals and time outside of the kitchen!

Speedy Slow Cooker Chicken Legs

2 1/2 lbs chicken legs, skin removed

1/2 cup ketchup

1/4 cup water

1/4 cup brown sugar

1 package onion soup mix

Place chicken legs in crock pot. Mix the rest of the ingredients and pour over chicken. Cover crock pot and cook on low for 8 hours or high for 4 hours.

Easy BBQ Slow Cooked Chicken

3 lb whole chicken

1 med onion, sliced

1 med. lemon, sliced

18 oz bottle bbq sauce of choice

3/4 cup cola

Place whole chicken in slow cooker and top with the lemon and onion slices. Mix bbq sauce and cola and pour over chicken. Cover slow cooker and cook on low for 8 hours or high for 4 hours...or until chicken is cooked through. When chicken juice runs clear, cut chicken into pieces and serve with the bbq sauce. This is great on buns.

Delicious and Easy Crock Pot Chicken Breasts

8 chicken breast halves, skinned

1 can cream of mushroom soup

16 oz sour cream

1 package onion soup mix

Place chicken in slow cooker. Mix remaining ingredients and pour over chicken. Cover slow cooker and cook on low for 8 hours or high for 4 hours. This is perfect with rice or noodles.

When you plan a party with your friends and family, you have so many things to attend to. The food, the decorations, and finalizing the number of things to make sure all your guests will be comfortable and enjoy themselves. You have to also keep in mind the taste preferences and health concerns of every invitee. You need to have sugar free desserts for people having diabetes and ensure there are low-calorie dishes for the health conscious or individuals on a diet. At such a time, it is nice to include a crockpot chicken dish in your menu. This can cook on its own when planned in advance and need not be stirred at constant intervals. Thus, leaves with you a lot of time to cater to all the necessities of planning the cozy gatherings.

Start early in the morning or from the night before for making this yummy crockpot chicken with marinade of orange. To make the marinade take two tablespoons of concentrated frozen orange juice, soy sauce and brown sugar, two cups of chicken broth, 6 ounces or one can of tomato paste, minced garlic, ground ginger and allspice, salt and pepper to taste and blend it well. Now add the chicken portions into this marinade and cover it completely. Refrigerate this mixture overnight for best results. It is advisable to use low fat meat as this will cook better and also be cheap on your pocket.

Put the marinated chicken in the crockpot and pour the marinade all over the chicken. Cover the lid and let it cook for 6 to 7 hours, this will make the meat tender and juicier. About 1 hour before the dish is done, add some sautéed mushrooms, green pepper, ginger and sections of mandarin orange. Stir the pot well and gradually add cornstarch, skimmed milk and cold water. Keep the stirring on and increase the heat to make the gravy thicken. Then cover and cook for 10-15 minutes more and your slow cooker chicken will be ready to enjoy.

French chicken stew is another one of the best crockpot chicken meals. It is healthy as well as a filling dish. Include this in your main course with a grilled fish side dish to compliment your lunch or dinner party. To make this stew add chunks of skinned, chicken breasts, one can of tomatoes, half carrot, onion and celery diced, half a cup of dry navy beans that is soaked overnight and simmered till it is tender, into a slow cooker and place it on low heat. While it is simmering, add the spices - garlic powder, ground sage and chili flakes, sweet basil, oregano and one bay leaf. Cover the lid and let the stew cook for about 10 hours. After that turn off the heat and stir the contents to evenly distribute all the delicious flavors. Remove the bay leaf and pour into the serving tray and you have your stew ready.

CHICKEN LINGUINE SOUP

2-2 1/2 lbs fryer chicken
2 medium carrots, cut in 1/4 inch diagonal slices
1 medium onion, sliced
2 stalks celery, with leaves, cut in 1/2 inch pieces
3 cups chicken broth
1 cup white wine
2 tablespoons soy sauce
1/8 teaspoon Tabasco sauce
1 teaspoon grated fresh ginger
salt
1 cup broken dry linguine
1/4 lb fresh snow peas, trimmed
1/2 teaspoon poultry seasoning

Cut chicken into pieces, remove skin. Place veggies in the bottom of 4 quart crockpot, top with chicken pieces. Blend chicken broth, wine, soy sauce, Tabasco, ginger and salt, pour over chicken pieces, cover.
Cook at low setting for 8 hours, remove chicken from bones, discarding bones and any fat, dice meat, return meat to pot, add dry linguine pieces and poultry seasoning, cook a further 30 minutes. 50 carbs 4 servings

Place vegetables in slow cooker. Add chicken. Pour in broth and water. Add dill and parsley. Cover and cook on low 8 hours. Remove vegetables and chicken from slow cooker. Add noodles, turn to high and heat while you shred the chicken. Return chicken to slow cooker and heat through. Cook for about 20 minutes, or until noodles are done.

Super Simple and Healthy Slow Cooker Beef Stew

1-1/2 lbs. beef stew meat
4 medium red potatoes, cut into pieces
1/3 cup flour
salt and pepper to taste
14 oz. can diced tomatoes, un-drained
2 cups water
3 cups frozen mixed vegetables

Place potatoes in bottom of slow cooker. Coat beef with mixture of flour, salt and pepper. Place meat in slow cooker. Add un-drained tomatoes and water and stir well. Cover slow cooker and cook on low for 8-10 hours. Add frozen vegetables and cook on low for 30 minutes until vegetables are tender.

SLOW COOKER CHICKEN FETTUCCINE

2 chicken breasts, halved
2 tbl olive oil
1/4 cup green onions, chopped
1 tsp garlic, minced
14 1/2 oz canned tomatoes, drained and chopped
1 tbl Basil
1 cup heavy cream
2 egg yolks
3/4 cup Parmesan cheese
8 oz fettuccine
1 cup peas (frozen) thawed
1-1/2 cups mushrooms (fresh) sliced

In a skillet, brown chicken breasts in olive oil. Place chicken in crock-pot. Add green onions, garlic, tomatoes, and basil. Cover and cook on Low 7 to 9 hours. Remove chicken and cut into
pieces. Return chicken pieces to pot. Stir in cream, egg yolks, and Parmesan cheese. Cover and cook on high 30 minutes to thicken. While sauce is thickening, cook fettuccine according to package directions; drain. Add fettuccine, peas and mushrooms. Cover and cook on high 30
to 60 min.

SLOW COOKER CREAMY CHICKEN

4-6 boneless, skinless chicken breasts
1/4 cup melted butter or margarine
salt and pepper, to taste
dried leaf thyme, to taste
1 clove garlic, minced
1 can cream of chicken soup
8 ounces cream cheese, cut into cubes (works well with low-fat versions)
1/2 cup chicken stock
1 cup chopped onions
1 rib celery chopped

Place chicken in crockpot. Brush chicken with butter and sprinkle with salt and pepper. Add herbs and remaining ingredients. Cover and cook on low for 6 to 7 hours.
